Broccoli and Kale soup


I was searching the Internet for a really good broccoli soup, I found some great ones but made some   modifications.... This has been my lunch choice lately and is so delish! 
I am trying to eat really healthy, my skin has been going crazy and I am trying to eliminate sugar and gluten from my diet (as much as I can) to see if that is part of the problem! 
As a result I have been feeling great and lost a few pounds.. 
My newly diagnosed "psoriasis" however is not even close to being gone, if you have any remedies for it PLEASE let me know.

Ingredients:

  • 2 tsp olive oil
  • 1/2 medium onion, finely chopped (about 3/4 cup)
  • 3 stalk celery, finely chopped
  • 10 baby carrots 
  • 4 cups fresh broccoli, including stems, chopped
  • 2 cups kale
  • 2 cups low-sodium, fat-free chicken or vegetable broth
  • 3 cups of almond milk (any milk will do)
  • 3 springs rosemary 
  • 2 cloves garlic
  • salt and pepper to taste

Preparation:

Heat oil on medium heat in a pot,  Gently sauté garlic, onion and celery for 3-4 minutes, until onion is softened. Add kale, carotts and chopped broccoli, followed by the broth and milk. Bring to a boil, then reduce heat, cover and simmer for 20 minutes, until vegetables are tender.
Allow soup to cool slightly, then transfer to a blender, I just used my hand held mixer and left it in the pot! Blend until smooth. Return soup to pot and heat gently until ready to serve.

  1. I assume, being in the beauty industry, you probably use good skin care products that I doubt would cause or irritate psoriasis, but if you wanted to you could try a line called Melaluca. (Can't spell that). They make everything from skin care to laundry detergent to cleaning supplies. I have a friend who's kids had extremely bad eczema that cleared up 100% after she switched all her products to Melaluca. I've never used it myself though, so take it for what it's worth!

    1. Thanks Andrea, I will for sure try the Melaluca and see if it helps. I have been bouncing around from doctor to doctor and trying different medications, food, ect. I am growing desperate as this horrible stuff has now spread to over 1/4 of my body.. Boo Hoo!! I will let you know how it works!! xoxo

  2. Ugh. What a pain to deal with!! Soup looks yummy though. I once overfilled the blender with hot broc cheddar soup. Wasn't pretty. Good luck with your skin sugar. :)
