Utah + Family

I was so lucky to be able to head to Utah this fall. Being thousands of miles away from my family I miss them so much, especially now that I have kids. My sister Stephanie has 6 kids (Brady bunch style) you know they each had three kids and then got married, Kristen has 3 boys, and my Brother Zack has one little boy (that I didn't get to see this trip). Anyways when these cousins are all together it is pure craziness!! Maddox and Noah are little partners in crime, for example they ran away in their undies and we found them 2 streets over... They are best friends and I wish we lived closer!!

Uncle Carson!! My little brother has chosen to serve a LDS mission!! He just got called to go to McAllen Texas and will be leaving after the holidays. I am so proud of him for doing this, a mission is no easy task, but I know he will nail it! 

Fall Favorites

Oh m geeeee I have been loving this fall weather and  I wish it lasted longer than winter don't you?! Michigan is the most beautiful place for fall with all of our wonderful orchards, pumpkin patches and vast greenery(now the changing leaves)..  whats even better if I don't have time to see, do, and decorate thanks to Pinterest I can enjoy the beauty of fall from the comfort of my couch! Ok so I have a pinning problem who doesn't? I still have to figure out what my baby boys are going to be for Halloween!! I can't believe it is right around the corner..

We had to stop at Wells orchard and pick up some fresh caramel apples...

I do have these jeans... I think I can even zip them up now, which is a huge bonus!!

Fish with out the "Fishy"

 Fish is a perfect go to for a quick, healthy, yummy meal! I am not a huge fan of fishy fish unless it is Sushi, so for me any white fish fillet is perfect!! This easy recipe brings out the delicate flavors of the fish effortlessly! 

What you will need

• two white fish fillets
• 1/2 teaspoon salt
• 1/4 teaspoon pepper 
• foil (luckily for me the hairstylist they already come in handy little squares)
• 1 medium green pepper
• 2 large carrots (or about 10 baby babes)
• 1 small red onion
• 2 tablespoons olive oil
• 1 lemon sliced thin
• 1/2 cup white wine... (or water, but the wine makes for a yummers sauce)
• 2 tablespoons of chives

Preheat the oven to 425

    Season the fish with the salt, pepper and chives. Place in the center of each foil... Add your yummy veggies, white wine, and olive oil and top with the lemon slices. Close the foil packets leaving a little room for the fish to steam..... Bake for 15 min.. Enjoy ;)

I served the fish with red wine vinegar lentils.... yums 

Seriously.. and the Lion King and JTT and Scar

So I always do a seriously post on Wednesdays, but this week has been a little crazy... So I think maybe I will talk about the movie we have been watching 17 times a day for the last three days. At least now we have DVD's and don't have to rewind it all day, back in the day my mom had one of those sweet VHS rewind machines so it only took 7.5 minutes to rewind instead of 13 minutes.

The Lion King!! 

I have been so excited to buy this for Noah it is my 2nd favorite Disney movie of all time! (First being Beauty and the Beast!) It came out when I was in 5th grade when my childhood crush was JTT (Jonathan Taylor Thomas). By the way did you know that wasn't really even him singing? Heartbreaking right?  My friends and I used to sit by the window and pray that he would just show up at our house.. I also used to tell everyone that my middle name was Taylor.. (yes I yelled at my mom because she didn't name me Taylor) So my room was decorated with Lion King everything and self made posters that said ...

So I did some research to see where he is now, because we all know that he fell off the face of the earth...  oh an by research I mean I asked all my facebook friends where he has been and Apparently he went to college and no one even knew who he was while he was there... He used his real name and hid from me... (Randy Taylor)  

Everyone, (well I guess like 3 or 4 people) tells me Noah looks like JTT.. I guess when Noah is 10 we will do a better comparison. 

Also what a freaking Jerk is Scar? Maybe we should have some sympathy for him... His brother is this big buff Lion and Scar is a wimpy little Pussy.. (yes pun intended) and his name is "Scar" sad talk about bullying ... hmmmm lets state the obvious... I am sure he feels really bad about the scar if I couldn't have surgery and get that fixed I would be bitter too, I mean I wouldn't kill my sisters over it, but people handle things differently...  worst of all his celeb look alike is.....

A Healthier & Easier Rice Crispy treat...

You want to know how to make the easiest, yummiest, quickest, and a healthier treat?! 

1. 8 cups of cereal, any will work this time I used special K.
2. 3/4 cup honey
3. 3/4 cup peanut butter
4. 1/4 cup crushed almonds *optional

In a large pot heat and stir together the honey and peanut butter until melted. Add the almonds and cereal and mix together, remove from heat and dump into a serving/baking dish to cool!                                 *I also sprinkled a few chocolate chips on top!

Enjoy!

ps the treats look a little dry because I put them in the freezer to cool, but they are very moist... (sorry I hate it, but for lack of a better word.. MOIST)

We're Back!

Oh My Gosh where do I even start? What a crazy, wonderful, stressful trip I just had! I will for sure be posting some pictures from my trip, but I need to play catch-up! 

Before we headed to Utah/Vegas we went to lunch at the "Green Well" aka my favorite place Ev in Grand Rapids! The food there is seriously incredible yummers!  We wanted to spend some time with Algum before we headed west!
